feat(nvim): modernize configuration, all-in on lua
Major changes:
- Switch from Packer to Lazy.nvim
- Use Mason.nvim for LSP auto-install & management
- Organize plugins into recommended structure
Experimental changes:
- Use oil.nvim instead of lua filetree
- Remove startify.vim
